HAND IN HAND - Via verde


RAPUNZEL gets its organic whole cane sugar from Brazil. The sugar mill of the Micali brothers is operated in Lucélia, federal state São Paulo.

HAND IN HAND – Via Verde

Whole cane sugar means thickened, dried and unrefined sugar cane juice. The whole cane sugar is won directly from the fresh sugar cane juice. The useful minerals and micronutrients, which are included in the whole cane sugar, give it a special aromatic flavor.

If sugar is heated at a very high temperature, acrylamide would come into being. In order to avoid this, the mass for the RAPADURA whole cane sugar, which is rich in minerals and vitamins, is carefully vacuum-dried.  

How is sugar cane harvested and processed?

The sugar cane is harvested by hand with a machete. Workers leave the leaves on the fields as green manure.

The big difference to conventional sugar cane cultivation is not only to work without pesticides, but to not burn down the fields before harvesting. This is normally done in order to ease harvesting, because all leaves burn down and only the sugar-containing caulis remains. In organic agriculture fields are not burnt down and thus biological activity of the soil, air and animals are preserved and the rich biomass is given back to the nutrient cycle.
