Mung dal are peeled and split mung beans and is cooked without previous soaking in only 12 to 15 minutes. Cooked mung dal is slightly creamy but does not fall apart and still has a pleasant bite. It can be prepared and refined in many ways, e.g. with ghee, coconut milk and various spices. In the Ayurvedic kitchen, mung dal is a delicious, slightly sweet tasting side dish served with rice and seasonal vegetables and is suitable for all doshas. It is therefore a quickly cooked side dish that is rich in protein and fibre.
