Method
Heat the coconut milk in a pot until it is completely liquid. Add the date syrup and the vanilla and mix. After that, add the chia seeds to the warm coconut milk and stir well to avoid any lumps. Pour the chia mixture into small glasses and let them soak for at least 15 minutes or up to 3 hours. Now cook the plums with the coconut blossom syrup, water and cinnamon in a pot till the plums are slightly soft but do not complete break apart. Top the chia pudding with the plum compote and serve with grated chocolate or coconut chips.

- 6 tbs chia seeds
- 400 ml Rapunzel coconut milk
- 1tbs Rapunzel date syrup (more if needed)
- 1 pinch Rapunzel Bourbon vanilla powder
- 400 g plums, stone removed and quartered
- 2 tbs Rapunzel Coconut palm syrup
- 3 tbs water
- 1 pinch cinnamon
