Heat the oil and add the maize kernels. Cover the pot with a lid. Use a lit to cover the pot but leave a little air so some steam can escape. The maize will pop after about 2-3 minutes. Remove the pot and set aside.
For the lime flavor heat the remaining coconut oil with chili and cayenne pepper in a small saucepan. Pour in the lime juice and add the zest and let everything simmer for a short minute. Stir and set the saucepan aside. Transfer the popcorn to a bowl and drizzle the flavored lime dressing over and mix well.
