Peppers from Tekelioglu - broiled delicacy
Growing tomatoes and peppers on small plots is a traditional practice for Turkish farmers. In the village of Tekelioglu, peppers are grown for the entire family as well as for Rapunzel.
In the beginning of June, the small pepper plants that were grown from seed are planted on the fields. As is the case with tomatoes, the weeds are mechanically removed 3-5 times a year and/or the crops plants are manually weeded.
Fresh, manually picked peppers are washed and broiled in a special oven over open fire. Next, the peppers are skinned and the skinned peppers are put into brine. Finally, the peppers are gently pasteurized.
