Pistachios from Adiyaman : healthy nibbles



For centuries, Turkey has been an internationally acclaimed production area for pistachios. Rapunzel pistachios are grown according to controlled organic guidelines in the Adiyaman province in Southeastern Anatolia. The Adiyaman region is very mountainous and the climate is characterized by hot, dry summers and cold winters with a lot of snow.

Such climatic conditions are ideal for the cultivation of pistachio trees that need approximately 1,000 hours of temperatures up to 7 °C for dormancy. Seed dormancy is necessary for a good harvest. A mild winter could therefore diminish the yield.

On the other hand, pistachio trees also tolerate very hot and dry periods. Pistachio plantations may produce nuts for centuries in so-called “alternate fructiferous“ cycles which means that the yield may alternate significantly from year to year.

In the month of September, our contract farmers manually pick the pistachios bundles off the trees. The pistachio bundles are dried in the sun. Next, the pistachios are soaked in water for at least 8 hours so that the outer shell can be removed. After another rinsing step, the shells of 10% of the pistachios open up by themselves.
The remaining 90% of the pistachio nuts are opened mechanically prior to roasting and salting.
Pistachios are rich in vitamins A, B1, B6 and E. In addition, they also contain valuable monounsaturated and polyunsaturated fatty acids, important minerals, proteins and trace elements.
