Pre-cut 'Amphissa' olive slices are ideal as pizza toppings, in salads and Mediterranean dishes. 'Amphissa' olives are very aromatic and popular because of their firm, juicy pulp. These olives are carefully cultivated on small family farms in Greece in the region between the Gulf of Corinth and the Aegean Sea and are manually harvested.

Preparation
The olives are manually picked. Harvest-fresh olives are very bitter and inedible. Therefore, the olives are stored in water and sea salt for several months in great, big barrels in order to remove their bitter substances. Next, they are pitted, sliced and filled into glass jars in a brine with water, lemon juice and sea salt. For preservation, the olives are heated.
