Manually produced according to Turkish tradition. The 'Gemlik' black olives, also known as 'Trilye', are harvested fully ripe by hand and are grown by farmers from the Rapunzel Turkey project. A special 6-8 month fermentation process gives them their intensely aromatic, full-bodied flavour and their characteristic, slightly wrinkled appearance. This speciality is neither marinated in oil nor in brine: the olives are only slightly marinated with extra virgin olive oil prior to being filled into jars.

Preparation
After they have been manually harvested, the ripe black olives are fermented for several months according to Turkish tradition. Before being filled into glass jars they are slightly oiled.

Olives that are preserved in oil do not need to be pasteurised, they are of raw food quality
The Greek oiled and herb marinated Rapunzel olives are also not pasteurised and retain their high raw food quality due to the gentle processing. They are available as green, black or mixed olives
The oiled olives from the Turkey Project are produced according to traditional Turkish fermentation methods and pasteurised to increase shelf life.
