The exceptionally aromatic fruits are cultivated along the mountainous slopes in the Malatyas region in Eastern Anatolia by local farmers of the Rapunzel Turkey project. Compared to the sweet apricots, the mountain apricots are cut open after harvest in order to remove the pits and dried in the Turkish sun. This allows for a very short drying time and the fruit retain the typical, bright yellow apricot color. Moreover, the gentle drying ensures the intense flavor and the firmness of the apricots.

Preparation
After the harvest, the apricots are cut open in order to remove the pits and they are dried for three days in the Turkish sun. Next, they are cleaned, sorted and packed.
