Sugar Cane Molasses


Molasses is a dark brown, viscous syrup that is a valuable byproduct from sugar production. For the production of cane sugar, the sugar cane juice is thickened and combined with sugar crystals. The sugar cane that is used for the production of Rapunzel molasses comes from controlled organic cultivation in Paraguay. 

Molasses has a very strong, intrinsic flavor. It tastes slightly bitter with a hint of licorice. Molasses is great for distinct-flavored foods such as lebkuchen, wholemeal pastries or flavorful sauces. It can also be used as sweetener in muesli and in apple sauce, but also for teas, juices and water. 

By the way: molasses can also be used for the production of rum. For that purpose, a mixture consisting of molasses, sugar cane juice and water, the so-called mash, is prepared. The mash is fermented until an alcohol concentration of 4 % to 5 % has formed. Next, the mixture is distilled and matured in oak barrels for some time.

Black molasses - a househld remedy that has been used in traditional medicine for centuries. Already Christopher Columbus had sugar cane molasses on board during his travels across the seas and called molasses "the healthiest and best food in the world". 

Molasses is a dark brown, viscous syrup that is a valuable byproduct of sugar production. Molasses is produced from sugar cane. Sugar cane grows in tropical regions such as Brazil or Paraguay. Sugar cane molasses contains a high concentration of minerals and trace elements. In particular, it has high iron, magnesium and potassium contents. 

The sugar cane plant belongs to the family of the sweet grasses that originated in Eastern Asia. Today, sugar cane is cultivated in all regions with favorable climatic conditions. The grass-like sugar cane stems have a diameter ranging from 25 to 40 mm and can grow 3-6 meters high.

Nutritional Physiology


Sugar cane molasses contains many secondary plant compounds with antioxidative and anti-inflammatory effects. Especially the combination of the different active ingredients can have positive effects on human health. 

Molasses is particularly rich in vitamins, minerals and trace elements and can balance deficiencies. Regular molasses uptake in combination with a well-balanced, healthy diet can support the normal functions of the human body and accelerates healing processes. 

Thanks to its high sugar content (approx. 21 % invert sugar and 33 % saccharose) molasses is an excellent energy supplier. The high content of magnesium, calcium, iron and potassium makes molasses perfectly suited for sports enthusiasts and athletes.  

Preparation and processing


For sugar production, the pure sugar cane juice that is derived from the pressing of the sugar cane, is carefully cleaned and thickened. For the manufacturing of whole cane sugar, the thickened juice is dried and subsequently ground. This traditional production process preserves most of the natural sugar cane compounds.  

In order to produce cane sugar, the thickened juice is inoculated with sugar crystals. The crystallized sugar is separated from the remaining molasses syrup through centrifugation.
